About the Role:
The Bakery Manager leads the bakery department, overseeing daily operations, product quality, and team performance. This role is responsible for ensuring bakery cases are filled with fresh, appealing products while maintaining Vallarta’s high standards for food safety, merchandising, and customer service. As a department leader, the Bakery Manager drives sales, mentors team members, and ensures compliance with company policies and health regulations.

What You’ll Do:
  • Leadership & Supervision: Write schedules, delegate tasks, train, and evaluate bakery team members while ensuring compliance with company policies.
  • Customer Service: Greet and assist customers with bakery and cake orders, always ensuring extraordinary service.
  • Product Quality: Prepare, bake, and decorate breads, pastries, and cakes, ensuring consistency in taste, weight, and appearance.
  • Merchandising: Merchandise products, rotate stock, and maintain fresh, attractive bakery cases.
  • Operations & Inventory: Audit pricing, codes, and tares; monitor ovens and proofers; order from approved vendors; review invoices; and maintain accurate inventory.
  • Compliance & Safety: Enforce food safety regulations, sanitation standards, and the Bakery Safety Program; correct unsafe conditions immediately.
  • Sanitation: Maintain clean, organized work areas, equipment, and countertops to ensure a professional department image.
  • Team Development: Lead by example, mentor employees, and create a safe, positive, and respectful workplace.
  • Other Duties: Perform additional tasks assigned to support department and store success.

Physical Requirements:
  • Stand and walk for long periods (6–8 hours/day).
  • Frequently bend, squat, twist, and reach above/below shoulders.
  • Frequent use of hands for grasping, pushing, pulling, and fine manipulation.
  • Lift and carry up to 25 lbs. frequently and up to 50 lbs. occasionally (flour, sugar, boxes).
  • Longest distance carried: 20 feet.
  • Work near ovens, mixers, and bakery equipment.
  • Exposure to varying temperatures, humidity, and occasional work at heights.

What We’re Looking For:
  • 3+ years of baking experience or 1+ year of bakery management experience.
  • Knowledge of baking methods and ingredients (Mexican, Central American, and American pastries, etc.).
  • Strong leadership, communication, and problem-solving skills.
  • Ability to thrive in a fast-paced environment and mentor team members.
  • Experience with bakery equipment, ovens, and tools.
  • Basic computer and math skills (Excel, Word, Outlook).
  • Must be able to speak, read, write, and understand English.
  • Must be legally authorized to work in the U.S.

Work Environment:
  • Fast-paced retail setting with direct customer interaction.
  • Exposure to perishable products, bakery equipment, and changing temperatures.
  • Must work flexible schedule: afternoons, evenings, weekends, and holidays.
