About the Role
The Assistant Meat Manager supports the Meat Manager in planning, directing, and managing the daily operations, quality, and performance of the Meat Department. This role ensures fresh, high-quality products, compliance with Vallarta’s food safety standards, and provides leadership to team members while helping achieve sales, labor, and expense goals.

What You’ll Do:
  • Leadership & Supervision: Assist in delegating and supervising employees, ensuring adherence to company rules, safety policies, schedules, and customer service standards.
  • Customer Service: Greet and serve customers with efficiency and courtesy, maintaining a clean and welcoming environment.
  • Manager Support: Assume full responsibilities of the Meat Manager in their absence to ensure smooth department operations.
  • Team Development: Train, coach, and recognize employees; enforce discipline when needed; and recommend promotions.
  • Operations: Assist with writing weekly schedules, ordering products, reviewing invoices, and maintaining accurate records of sales, transfers, and inventory.
  • Product Quality: Maintain consistency in quality and appearance of meat, pescadería, and cremería products; follow schematics provided by supervisors.
  • Merchandising: Rotate and replenish items, maintain signage, and ensure attractive, fresh displays.
  • Compliance & Safety: Enforce Vallarta’s Safety Program, correct unsafe acts or conditions, and ensure compliance with health codes and state weights and measures regulations.
  • Sanitation: Maintain cleanliness of prep areas, floors, cases, and equipment.
  • Other Duties: Support Meat Manager and store leadership as needed and perform tasks to ensure department success.

Physical Requirements:
  • Stand and walk constantly (6–8+ hours/day).
  • Frequently bend, squat, twist, kneel, and reach above/below shoulders.
  • Frequent hand use for grasping, pushing, pulling, and fine manipulation.
  • Lift and carry up to 25 lbs. frequently and up to 50 lbs. occasionally; heaviest item: 65 lbs. box, carried up to 100 feet.
  • Operate cars, trucks, forklifts, and other moving equipment.
  • Work near equipment and machinery; exposure to temperature and humidity changes.
  • No work at heights required.

What We’re Looking For:
  • Knowledge of all types of meats, seafood, and related products.
  • Familiarity with equipment, machinery, and tools used in meat preparation.
  • 2–3 years of supervisory or leadership experience preferred.
  • Ability to train and coach employees in a fast-paced environment.
  • Must successfully pass food safety certification every 3 years.
  • Strong communication skills and positive, professional attitude.
  • Must be able to speak, read, write, and understand English.
  • Must be able to transfer to other store locations within a reasonable commute.
  • Must be legally authorized to work in the U.S.
